Installing ESXi 5.5 onto HP Proliant G7 N54L

I am planning on doing an install on this server that I have bought.  It currently has a 250gb SATA HDD installed.  I am going to expand the HDD and upgrade to 8gb RAM.

I believe it also has an internal USB connection for a Tape drive, but this can be used for a USB as well.

 

I plan on running 2 or 3 VM's.  One will be a Windows 2008 PDC, a Windows 2012 DC and possibly another Windows 2008 Server for Plex use with a Now TV box.

The PDC and DC will be also be used as a lab for me to learn on.

 

I have seen that some people have installed the Hypervisor to a USB drive and then used the hard drive(s) for the VM's.  Would this be a sensible option for speed? How many drives would be recommended for running the 3 VM's?  I have the room for 4 drives up to 8TB.
